Veganuary is a popular New Year’s resolution, in which many people worldwide try to eat plant-based diets for the month. A staple of a plant-based lifestyle are dishes that combine vegetables in flavorful and filling ways. A power bowl combines a base carb such as brown rice, quinoa or noodles and tops it with different flavors and textures of veggies. It can also be topped with fish for a non-vegan protein enhancer. This healthful, satisfying meal is stunning and delicious, whether you are vegan or not.

1 package of bean noodles or glass noodles
1/4 cup cooked beets, cubed
1/4 cup julienned carrots
1/2 avocado, sliced
1/4 cup julienned cucumber
fresh chili pepper, to taste
fresh lemon zest, to taste
black sesame seeds
1-2 tablespoons Mighty Sesame Tahini
Cook glass noodles (or noodle of choice) according to package instructions. Drain and add to bowl.
Top with beets, cucumber, carrot, and avocado. (For non-vegan option, you can also add fish here.)
Sprinkle with chili pepper, lemon zest, and black sesame seeds
Drizzle with Mighty Sesame Tahini and enjoy!
